
Sauteed Bananas and Pears with Raisin Sauce

Warm fruit desserts are a great way to enjoy fruit and work toward your five daily servings. Try this alone or top with 1/4 cup of frozen yogurt!
2 large bananas, peeled, cut in half crosswise, then in half lengthwise
(8 pieces)
2 medium firm, ripe pears, cut in half with cores removed, then cut in half again (8 pieces)
1 T. lemon juice
2 t. canola oil
2 t. butter
2 T. brown sugar
¼ c. raisins
1 t. rum extract, or to taste
½ t. cinnamon
6-8 gingersnap cookies, crushed or crumbled
1. Place bananas and pears in separate bowls and gently toss with lemon juice. Set aside.
2. In large nonstick skillet over medium heat, melt butter and canola oil together.
3. Stir in raisins and sugar. Cook for 2 minutes.
4. Add pears and stir to spread sugar evenly.
5. Cook for 10 minutes, covered and stirring often.
6. Add bananas. Reduce heat to medium-low. Cover and continue cooking another 5-10 minutes until tender, about 10 minutes.
7. Stir in rum extract, if using, and cinnamon. Cook another minute, stirring often.
8. Transfer hot fruit to serving dish and sprinkle with crushed gingersnaps. Serve immediately.
Makes 4 servings: Per serving: 239 calories, 6g total fat, 2g saturated fat, 50g carbohydrate, 2g protein, 5g dietary fiber, 74mg sodium.
